Nothing says comfort food quite like a warm bowl of soup! It’s like a hug in a bowl…don’t you think? Especially on those chilly Winter nights! One of my favourite soups has always been tomato soup. Pair it with a crispy grilled cheese sandwich and I’m drooling!Β

Why Homemade Soup is Better

Take a stroll in any grocery aisle, and you will likely be bombarded with all kinds of canned and boxed soup options. All you have to do is heat and serve! So easy right? But have you guys looked at the ingredients list of most of these soups? Even the ones from the health food stores labeled organic, low-salt, etc…are being disguised as healthy. But if you take a closer look you’ll be shocked at the amount of sugar and salt in most of them. This is why homemade soup is always a better option. You get to control what goes in that pot! And making homemade soup doesn’t mean that you have to slave over your stove. You can make a quick and delicious soup that’s ready in minutes!

How To Make a 10 Minute Tomato Soup?

This recipe is so much tastier and healthier than any canned or boxed tomato soup out there. One way to speed up the process of cooking a simple tomato soup is by using canned tomatoes. For this recipe, I decided to use canned fire roasted tomatoes as it has a nice smoky char flavour. But feel free to use any canned tomatoes you have on hand! To make this Fire Roasted Tomato Bisque extra creamy, I like to add a bit of coconut milk. And to add more flavour, I like to toss in fresh herbs and a little chilly for heat.Β 

My next tip to speed up the cooking process is to blend all the ingredients first. Now I know that may seem like a backward way to make soup. Usually, soup is cooked first and then purΓ©ed. But trust me, blend first, heat second and voila! Soups on! Now toss all your ingredients in the blender and blend until smooth. Then simply transfer to a pot and heat until simmering. It’s just as easy as heating one of those canned or boxed soups, but so much healthier and tastier! You won’t believe this Fire Roasted Tomato Bisque came together in 10 minutes. And I guarantee this recipe will be on regular rotation on the dinner table.Β

Fire Roasted Tomato Bisque

Ingredients:

  • 1 can fire roasted diced tomatoes 28oz/798ml
  • 1/2 cup canned full fat coconut milk
  • 2 tbsps nutritional yeast
  • 1 clove garlic chopped
  • 1/2 tbsp fresh basil chopped
  • 1/2 tbsp fresh oregano chopped
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4-1/2 tsp chilli flakes (depending how much heat you like)

Instructions:

  • Add all ingredients to a high-speed blender, and blend on high for 15 to 20 seconds or until smooth.
  • Transfer to a large pot and heat over med-high heat for 5 to 8 minutes, until steaming. Serve with a drizzle of coconut milk and croutons. Enjoy!

    Okay, we have been making this soup for well over a year now, maybe two years, and it is hands down our favorite soup ever! I have a 7 and 4 year old who are picky and while hubby and I have tried many healthy life styles we still eat other kinds of foods. This soup is THE BEST! And I’m telling you, if my kids will eat it then it is delicious! We throw everything into our instant pot blender and let it cook the soup for us. So good!

    Is there any reason you can think of that blending this with the soup function on the Vitamix to heat would not work the same as heating it on the stove? We have a Vitamix at work and I would love to make this for lunch!
