When it comes to breakfast, I tend to stick to my favourites. For most of the year I crave a fresh green smoothie in the mornings, but once the colder months start rolling in it’s all about the oatmeal for me! A warm bowl of oatmeal is the perfect start to a crisp fall day, and the best part about oatmeal is you can mix it up with tons of creative flavours and toppings. And what screams fall more than pumpkin oatmeal? It’s literally fall in a bowl!
To be honest, I was never really into the pumpkin spice trend. Over the years however, I’ve grown to fall in love with pumpkin pie itself, as well as just the joy of pumpkin in both savoury and sweet recipes. I’ve been looking for recipes that I can make for both my daughter Sage and myself, and since I love to sneak veggies into her breakfast (and mine) pumpkin oatmeal sounded perfect! I randomly made it for breakfast one morning and WOW. It hit the spot!
How to make Pumpkin Oatmeal
5 simple ingredients – All you need for this recipe (unless you want to add any extras) is oats, pumpkin, coconut milk, banana and pumpkin spice!
Natural sweeteners – If you’ve been around for a while, you’ll know I love swapping out processed sugar for more natural sweeteners. This recipe uses the creamy combination of banana and coconut milk to sweeten.
Adding spices – If you want to add a little extra oomph to your oatmeal, opt for warm spices that scream fall like cinnamon, ginger, nutmeg, allspice and clove.
Adding extra toppings – As with all my oatmeal recipes, you can really jazz it up by adding whichever toppings you like. I love adding crushed walnuts or pecans, sliced bananas and a drizzle of maple syrup.

Made this today on a cold morning and I loved it! Used low fat evaporated milk instead but it was still super delicious, will definitely be a go to for me!
