Creamy Pumpkin Oatmeal
This Pumpkin Oatmeal is ready in just 15 minutes and is the perfect healthy yet cozy Fall breakfast! Sweet, creamy and hearty and made with just 5 simple ingredients, it tastes just like homemade pumpkin pie! Who doesn’t want pie for breakfast?

- 1 cup water
- 1 cup canned coconut milk
- 1 cup old fashioned oats (use gluten free if needed)
- 1/2 cup canned pumpkin puree
- 1/2 ripe banana, sliced
- 1/2 tsp pumpkin spice
- Pinch sea salt
TOPPINGS
- Crushed walnuts or pecans
- Pure maple syrup
In a medium size pot, add in all of the ingredients, stir and bring to a boil.
Lower the heat and simmer for 10 minutes, stirring occasionally.
Once the oats are cooked and creamy, remove from the heat and plate.
Top your bowl of oats with an extra drizzle of coconut milk, crushed walnuts or pecans, sliced banana and a drizzle of maple syrup and enjoy!
