If you’ve ever dreamed of eating ice cream for breakfast, then you are in for a treat! This superfood acai bowl is about to make all your breakfast dessert dreams come true, and it’s low in sugar and totally healthy! So you can feel good about enjoying this all summer long if you want to, and get creative with the toppings as well.

If you’ve never heard of acai before, this superfood is a deep purple coloured berry that looks like a cross between a blueberry and a grape. It is packed with antioxidants, fibre, vitamins and minerals. Acai berries are especially high in the antioxidant anthocyanin. This antioxidant can potentially help to boost brain health, lower inflammation in the body, and reduce oxidative stress. If you aren’t sold already, then I should also mention that they taste like a chocolate-y berry. The health benefits are just the icing on the cake!

If you still are not a fan of green smoothies (despite all my raving about my perfect green smoothie recipe that is so delicious!) then this nutrient-dense acai bowl is a great option for you. I get it, some days you want to be healthy, but you may not feel like drinking a garden of greens – and that’s where this acai bowl comes in!

For this recipe you can use acai packets or acai powder, either will work. If you’re using acai powder you may need to add some ice cubes or extra frozen berries to make it nice and cold.  

Freeze, Blend, Decorate!

This is the perfect 5-minute breakfast because it’s so simple to make. I like to keep bananas and berries in my freezer at all times so that I know I can reach for them when I want a smoothie or acai bowl like this one. These jumbo silicone reusable storage bags are what I store frozen bananas in (just take the skin off and break them in quarters) for easy meal prep. 

For toppings, I recommend using fresh blueberries, strawberries, and kiwi! You’ll also want to add a little bit of crunch with some toasted shredded coconut, and granola. My Stovetop Granola recipe from the HealthNut Cookbook would be the perfect crunchy topping to this smoothie bowl.

Secrets for the perfect acai bowl:

  • Make sure your bananas are frozen, this gives it the creamy ice cream-like texture!
  • Use only a small amount of liquid in your blender. The thicker, the better.
  • Look for acai packets that have no sugar added to help keep sugar to a minimum – I use this kind!
  • Experiment with adding other frozen fruits and berries such as blueberries, blackberries, mango, or pineapple for other fun flavours!
  • Blend on low while mixing the fruit around with the tamper as much as possible. Keeping the blender speed low will help to keep the consistency nice and thick.
  • And be sure to take a photo of your beautiful acai bowl creation, because that’s half the fun!

Recipe

Superfood Acai Bowl

Prep Time: 5 minutes

Ingredients:

  • 2 acai packets or 3 tsp acai powder
  • ½ cup frozen strawberries
  • ½ cup frozen pitted cherries
  • 1 frozen banana
  • ½ cup unsweetened oat milk

Toppings

  • Fresh blueberries
  • Fresh strawberries
  • Golden kiwi
  • Granola
  • Shredded coconut

Instructions:

  • Run the acai packets under warm water to thaw slightly and loosen the frozen fruit from the package.
  • To the blender, add the acai and frozen strawberries, cherries, and banana. Add about 1/2 cup of unsweetened oat milk, and begin blending.
  • Use a tamper to push the fruit down as you blend. Since we’re not using much liquid, this will be necessary to get a nice thick consistency. If your blender does not have a tamper, you may need to stop it and use a spatula to push the fruit down a few times. If needed you can add a little extra oat milk as well.
  • Once everything is smooth and nicely blended, pour into a bowl and decorate!
  • Top with sliced strawberries, fresh blueberries,  kiwi, shredded coconut and granola. Enjoy right away, before it melts!
