Who doesn’t love a well seasoned and roasted carb like potatoes? I mean there are many ways to cook a potato. You’ve got- boiled, scalloped, mashed, roasted then smashed, to name a few but does anything really compare to the basics like a good roasted potato? I think not!
Mr. Matt aka my other half always used to make these amazing oven roasted potatoes. It was so simple but oh so yummy. He’d add peppers and onions to his potatoes and I just loved the combination of flavours I decided to recreate them and share the recipe with my online fam. So here I am claiming the recipe as my own! (sorry Matt!). These are what I like to call my ‘oven roasted potatoes with a twist’.
The best oven roasted potatoes just need a few key ingredients and the right amount of time in the oven at the perfect temp. It’s easy to under or overcook them. But this foolproof recipe will ensure even the least experienced cook can get beautifully golden, crispy skins and fluffy, pillowy-tender insides. They’re perfect for a cooked lunch (try serving them as a side for your next BBQ!), great on busy weeknights and to die for during the holidays. Basically, they’re always a good option!
