How To DIY A Breakfast Wrap

This is one of those recipes that seems complicated to make, but is actually pretty simple. Once you have all the ingredients, it’s as easy as making an omelette! I know that there are several ways to make a breakfast wrap, but this is how I like to make mine. I start off by cooking the eggs and peppers first, just like I would if I was making an omelette. My tip for cooking it faster is to put a lid on top of the skillet. Once the eggs have cooked for a couple of minutes, I add a handful of spinach (cuz your girl loves her greens) and a little feta on top. Then, I fold the omelette in a half moon shape, cover and cook another minute. Next, carefully transfer the omelette on top of the tortilla and wrap it up burrito style. You’re almost there!! Transfer the breakfast wrap on to a hot skillet and brown on each side to get it nice and toasty! And voilà, you got yourself a tasty breakfast wrap! Now wasn’t that easy?

Can You Prep Ahead A Breakfast Wrap?

Yes, you can! This is the best part about this recipe…besides the deliciousness. You can make as many wraps as you like, just keep a few tips in mind!

  1. Wait until all the ingredients have cooled down before rolling up the “burrito”.
  2. Skip the browning/grilling.
  3. Roll each burrito in parchment paper, then write the date on it, and place in freezer.
  4. Thaw the burrito overnight in the fridge, or in the microwave. Then brown it in the skillet to heat it up and add a bit of crunch!
