I started to feel like all I was ever eating was corn chips and my homemade guacamole, so I decided the other day I needed to switch things up a little. Mango salsa has been one of those recipes that I go to when I want to impress my friends and family without too much effort if you know what I mean… It’s so easy to whip up and tastes so fresh and unique with the whole sweet and savoury combo that everyone loves it. They also think I’m super fancy for making it for them so lets keep this our little secret!

Mango has always been top on my list of favourite fruits. What’s not to love its sweet, tropical and just delicious, right? I remember when I first met my Matt (my bf) and he told me he didn’t like mango… wait what? Turns out he had never had ripe mango which is like eating a green banana, no really but you know what I mean. Unless your making green mango salad (which is actually very delicious) you want to make sure you mango is fully ripe. It will make the biggest difference especially in this recipe.

What makes this spicy mango salsa recipe so refreshing is that the juices from the ripe mango, tomatoes and lime just mingle together, make friends and create a burst of flavours in your mouth. The jalapeño is optional although I highly suggest it even if you don’t love the heat you can still add in a little and it wont be crazy hot because you have the sweet mango to balance it out. I even love making this recipe as a side to compliment grilled fish like salmon steak (new favourite) … it tastes incredible together!

Don’t get me wrong I still love me some blueberry pie, and vegan ice cream, but I no longer have intense cravings like I once had. Bring on the guacamole and salsa’s and I’m in chip dipping heaven.

Recipe

Spicy Mango Salsa

A spicy sweet and savoury mango salsa dip.
Prep Time: 8 mins
Total Time: 8 mins

Ingredients:

  • 1 cup diced vine ripe tomatoes
  • 1 large ripe mango cubed
  • 1 sweet pepper diced
  • 1/2 medium red onion diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 jalapeno minced
  • 1 tablespoon oil olive
  • 1 lime juiced
  • 1/8 teaspoon cumin
  • Pinch of salt and pepper to taste

Instructions:

  • In a large bowl, mix all the ingredients together including the lime juice and spices.
  • Mix thoroughly and enjoy straight away or refrigerate in an air tight container for later.

Notes

Refrigerating overnight will enhance all the flavours in your spicy mango salsa!
