How to Make a Healthy Omelette- Thai Style Omelette

I’m going to show you how to make a healthy omelette and how to make it taste amazing! I love it because it’s a mix of raw and cooked veggies with a burst of flavour!Β This is a recipe i’ve been wanting to share for quite some time now. I’ve been addicted to cooking my eggs and fish in coconut oil because it makes them taste so amazing.. I can’t get over it! Switch up your regular vegetable oil for coconut oil and you’ll see the difference instantly. Did I mention it’s healthier for you?

How to make a healthy omelette

Back to the recipe I’m about to share with you all. I originally decided to make a regular veggie omelette but after adding the coconut oil I realized I wanted to add some more “Thai inspired” flavours to really kick it up a notch. I was lucky enough to visit Thailand last year and it was such an amazing experience and this dish reminds me of some of the flavours.

Thai Style Omelette

A taste bud explosion with flavours inspired by Thailand.
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients:

What you will need

  • 2 organic free range eggs
  • 1 green onion minced
  • 2 cloves garlic minced
  • 2 baby bell peppers chopped
  • 1/2 lime squeezed
  • 1/2 medium tomato chopped
  • 1/2 avocado chopped
  • 1/2 large zucchini sliced
  • 1 tbsp. freshly minced cilantro

Seasoning

  • 1/2 tsp. turmeric
  • 1-2 tsp. nutritional yeast
  • 1/4 tsp. cumin
  • 1 tbsp. coconut oil

Instructions:

  • Start by preparing all your chopped veggies and set aside.
  • In a small bowl, whisk together your eggs, turmeric, nutritional yeast, cumin, salt and pepper to taste.
  • Set your stove top to medium heat and in a non stick pan add in 1/2 tbsp. coconut oil and pour your egg mixture in.
  • Cook eggs into an omelette and fold over into a half moon shape.
  • In a second non stick pan add in 1/2 tbsp. coconut oil and the garlic, zucchini and bell pepper.
  • Cook veggies until slightly soft or about 5 min on medium to low heat.
  • Once your eggs are cooked to your liking, place on a large plate.
  • Pour over your cook veggies and top with avocado, green onion, cilantro, tomato and fresh lime juice.
  • Enjoy!

Β Another reason why I love this recipe is the fact that it has a nice combination of both raw and cooked veggies. People today are just not getting enough raw food in their diet and their losing out on a lot of nutrients and enzymes. Remember you are what you eat and if all you eat is cooked, processed foods how do you think your going to feel? Eating fresh bold colours with brighten up your mood, make your skin glow and give you the right amount of nutrients your body needs.
