If you’ve been watching our friday vlogs or following along on Instagram stories, than you already know that I’ve been teasing you guys with this colourful recipe. This veggie packed sammy has been on repeat and I’m not sorry about it! It’s crunchy, creamy and I just love all the colours and flavours you get in every bite from all those yummy layers.

If you’re going to make a veggie sandwich, it has got to be filling and flavourful. Adding sliced beets to this sandwich really takes me back to when Mr. Matt and I were living in Australia. They would seriously put sliced beets on everything from burgers to wraps. Although at first it was a bit odd, I quickly got into it! I feel like us Canadians don’t give this magical liver loving root vegetable enough love.

Ready In 5 Minutes

This recipe comes together in a matter of minutes and it’s super easy to pack for lunch. You can even make it for a lazy dinner!! I mean there are no rules that say you can’t have a sammy for dinner, am I right? All you need is a couple of slices of your favourite bread, toasted or untoasted and your favourite hummus. Then, start stacking your favourite veggies, add a bit of aioli or dijon, smack that other piece of bread on top! That’s it. Just make sure it’s not stacked too high and that you can get your mouth around all that goodness!

Rainbow Stacked Veggie Sandwich  

Prep Time: 5 minutes

Ingredients:

  • 4 slices of your favourite bread toasted or untoasted
  • 4 tablespoons caramelized onion hummus
  • 6 to 8 large leaves of fresh spinach
  • ½ large ripe avocado thinly sliced
  • 1 large pre-cooked beet thinly sliced (I buy mine from Costco)
  • 8 thin slices of English cucumber
  • 2 thin slices of tomatoes
  • 1 handful of sprouts or microgreens I like baby onion sprouts or alfalfa for this one
  • 2 tablespoons grainy dijon mustard or aioli I use this kind

Instructions:

  • Spread 2 tablespoons of hummus on 2 slices of bread.
  • Top each slice of bread with spinach leaves, avocado slices, beets, cucumbers, tomatoes and top with a handful of sprouts.
  • Spread 1 tablespoon of mustard or aioli on the remaining slices of bread, and place on top of the sandwich. Press together firmly, cut in half and enjoy!
