5 easy and healthy back to school or work bento box lunch recipes perfect for your Sunday meal prep!ย
Being an indecisive Libra I am a huge lover of bento box lunches because you get a variety of foods all packed into one convenient container that you can take with you on the go. Today I’ve got 5 bento boxes 5 different ways so you get a different mix of foods for each day of the week.

To make your meal prepping even easier I decided to startย to use similar grains, protein and veggies in most of the bento boxes so you can just prep a larger batch and adjust the ingredients slightly to get different combinations and flavours without cooking a storm in your kitchen.
Monday
Curry Cauliflower Wrap
INGREDIENTS
1 cup roasted cauliflower
1/3 cup roasted curry tofu
1/4 cup cooked quinoa
1/4 cup kale slaw
Couple sprigs of fresh cilantro
2 rice paper wraps
Spicy Coconutย Sauce
1/2 cup plain coconut yogurt
1 tsp sriracha
1/2 lime juiced
1/2 tsp garlic powder
salt and pepper to taste
Tuesday
Greek Chicken & Quinoa Salad
INGREDIENTS
1 small grilled eggplant
1/2 cup cooked quinoa
1/2 cup cherry tomatoes chopped
1/2 cup cucumber chopped
1/4 cup red onion chopped
4 Kalamata olives
1 tsp olive oil
Greek Seasoning
Lemon
Salt and pepper to taste
Tzatziki Sauce
1/2 cup plain coconut yogurt
1/2 cup cucumber grated and strained
1 clove garlic minced
1/2 lemon juiced
1 tbsp fresh or 1 tsp dried
Salt and pepper to taste
Wednesday
Thai Chicken Lettuce Wraps
INGREDIENTS
1/3 cup grilled tamari tofu
1/2 cup cooked quinoa
3 leafs of butter lettuce
1 cup kale salw
Chopped cashews
fresh cilantro
1/4 cup Creamy Cashew Thai Dipping Sauce
Creamy Cashewย Thai Dipping Sauce
1/2 cup unsweetened cashew milk
1/2 cup cashew butter
1 tbsp tamari sauce
1 tbsp maple syrup
1 tsp fresh ginger
1 clove of garlic
1/2 lime juiced
salt and pepper to taste
Thursday
Asian Kale Slaw with Creamy Cashew Ginger Dressing
INGREDIENTS
1/2 cup cooked quinoa
1/3 cup grilled tamari tofu
1 medium ripe mango chopped
1 1/2 cups kale slaw
Couple sprigs of fresh cilantro
1 tbsp chopped rawย cashews
1/4 cup Creamy Cashew Thai Dressing Sauce from Wednesdayโs recipe.
Friday
Creamy Mint Pea Pesto Pasta
INGREDIENTS
1 cup cooked brown rice pasta
1/2 cup cherry tomatoes chopped
1/2 cup cucumber chopped
1/4 cup cooked corn kernels
1/4 cup of mint pesto dressing (see below)
Creamy Mint Pea Pesto Dressing:
1/4 cup plain coconut yogurt
1 tbsp nutritional yeast
1/4 cup raw walnuts
1/4 cup fresh mint
3/4 cup fresh basil
1/3 cup sweet peas
1/4 cup olive oil
1/2 lemon juiced
2 cloves of garlic
Sea salt and pepper to taste

LOVE LOVE LOVE how a lot of these lunches are vegan-friendly! Tofu lettuce wraps, spring rolls, and a kale salad with a delicious cashew dressing are some of my favorite lunches that I’ve enjoyed in the past myself! Definitely want to make these again!
