Egg and avocado on toast is a classic, but this viral TikTok twist makes it even better – if that’s even possible! This grated egg avocado toast is toasted sliced bread, piled high with smashed avocado and shreds of egg, perfectly seasoned.

I’m a huge boiled egg fan, so I was intrigued to see what all the fuss was about this TikTok famous Grated Egg Avocado Toast. It’s such a simple recipe but a great option for anyone who’s not a huge fan of boiled eggs, or if you’ve got hard boiled eggs in the fridge and you’re craving something a little different. It’s soft pillowy shreds of egg topped onto a traditional avocado toast with a drizzle of olive oil – the perfect cold lunch! It kind of reminds me of a buttery egg salad. Top tips for the perfect boiled egg

  • Bring a pot of water to boil, lower to a simmer. 
  • Carefully and slowly add the eggs to the water. 
  • For this recipe you want to hard boil your eggs so that the yolks are not runny, so cook for 14 minutes. 
  • Once cooked, remove using a slotted spoon and transfer to a bowl filled with ice water and allow to cool. Peel and keep cool in the fridge until you’re ready to grate, as this will make it easier.

TikTok Grated Egg Avocado Toast

Egg and avocado on toast is a classic, but this viral TikTok twist makes it even better - if that’s even possible! It’s toasted sliced bread, piled high with smashed avocado and shreds of egg, perfectly seasoned.

Ingredients:

  • 2 hard boiled eggs peeled and cooled
  • 2 slices of bread (sourdough or multigrain work well)
  • 1 ripe avocado
  • Drizzle of extra virgin olive oil
  • Pinch of sea salt and black pepper to taste

Toppings:

  • Optional: you can also add grated cheese on top

Instructions:

  • Boil your eggs (check the tips above) and keep them cool in the fridge while you prep the rest of the ingredients.
  • Toast 2 slices of bread and mash avocado on top.
  • Season with salt and pepper, then grate your boiled eggs and sprinkle on top.
  • Optional: Drizzle with a little olive oil, and grate some cheese on top to finish it off.
