Pineapple Cucumber Agua Fresca made with refreshing cucumber, pineapple, ginger, mint and zesty lime juice is the perfect mocktail on a hot summer day!
Nothing says summer like a refreshing agua fresca! This popular Mexican drink made with blended fruits, water and sweetened with sugar is an all-time favourite. I’ve always loved making refreshing fruit flavoured water in the summer, and unlike regular juice which is full of sugar, agua fresca won’t cause a high sugar spike because it contains the entire fruit so it’s full of fiber and natural sugar.
If you’ve never made agua fresca it’s super simple. All you need is a good blender, your favourite fruits, lime juice and your imagination! My favourite combination is cucumber, pineapple, ginger and mint as it’s super refreshing, hydrating and also great for digestion. You can control the sweetness by either skipping the maple syrup or adding as much as you like. I added a touch of maple syrup but this is totally optional. If you do like your beverages sweeter and want to skip the added sugar, you can substitute half the water with coconut water which is naturally sweet and super hydrating. Straining is also optional depending on whether you like your drink pulpy or sans pulp. Just remember – more pulp equals more fiber!
The great thing about this mocktail is that it can be enjoyed by the entire family. I love making a large pitcher on a hot summer day and customizing it for adults only by adding a splash of gin or vodka. It’s a great way to stay cool and hydrated.
