Fluffy yogurt pancakes made with wholesome ingredients that are gluten-free; these are perfect for your next Sunday feast.
I’m starting to feel like pancakes should be part of their own food group, don’t you think? I don’t know what it is about pancakes but to quote Marie Kondo, “it sparks joy”…haha! If I could, I would have pancakes every morning, especially since I have so many pancake recipes. So far I have six on the blog, four of which I created just in the past year, one of which is not on this site, but was sent out to all of my subscribers with the monthly newsletter. Now, back to the recipe. If you have been a long time follower, then you know I already have a recipe on my channel for The Best Gluten-Free Fluffy Pancakes Ever which I created over 3 years ago. Well let’s just call this version 2.0!
I tweaked this recipe by swapping the banana for yogurt, and it makes these pancakes SUPER fluffy! I know not everyone loves banana and some are even allergic, so this one is for you! I love how yogurt adds moisture and fluffiness to these pancakes.
My secret to keeping these pancakes extra fluffy is to let them cool for a few seconds on a cooling rack! Stacking them rather than piling them on top of each other means they will not get soggy. Once you’re ready to serve them, you can stack them on top of each other! Then, add a dollop of yogurt, top with fresh fruit like berries or sliced bananas! Drizzle with as much maple syrup as your heart desires.
I also love serving these pancakes with a berry compote. You can make this by heating some frozen berries with a little maple syrup on low heat until warm and all the juices are released. Yum!

Hi Nikole, I made these this morning and they are the best healthy pancakes I’ve tried. Banana doesn’t agree with me and I was making pancakes with apple sauce but got sick of the taste. I made then with coconut yogurt and they taste amazing and so fluffy. 😋🥰

Do you recommend brown rice flour or white rice flour?
Could you sub the brown rice flour for tapioca flour?

I made these this morning and they came out great! I’m not the biggest fan of banana pancakes, so I’m really happy that these have yogurt instead. They were nice and fluffy and I will definitely be making these again. Thanks Nikole!
