Start by preparing all your chopped veggies and set aside.
In a small bowl, whisk together your eggs, turmeric, nutritional yeast, cumin, salt and pepper to taste.
Set your stove top to medium heat and in a non stick pan add in 1/2 tbsp. coconut oil and pour your egg mixture in.
Cook eggs into an omelette and fold over into a half moon shape.
In a second non stick pan add in 1/2 tbsp. coconut oil and the garlic, zucchini and bell pepper.
Cook veggies until slightly soft or about 5 min on medium to low heat.
Once your eggs are cooked to your liking, place on a large plate.
Pour over your cook veggies and top with avocado, green onion, cilantro, tomato and fresh lime juice.
