Grilled Corn Salad

  • 4 cobs of corn
  • 1 avocado chopped
  • 1 cup sliced cherry tomatoes
  • 2 tbsp. olive oil
  • 1 minced clove of garlic
  • Juice from 1/2 a lemon
  • Handful of chopped parsley
  • Pinch of sea salt & pepper


  • Wrap corn in foil and bbq for 20-25 min on medium heat.
  • In a small bowl, whisk olive oil, lemon juice, parsley and salt and pepper together.
  • Cut the corn off the cob and throw into a bowl with the diced avocado and tomatoes.
  • Toss in dressing and enjoy.
