Vegan Banana Bread Mug Cake
A quick no bake vegan banana bread mug cake.

Ingredients

tbsp.
spelt flour

tbsp.
chocolate chips or frozen blueberries
1/4
very ripe banana
1
tbsp.
unsweetened apple sauce
1
tbsp.
unsweetened almond milk
1/8
tsp.
vanilla extract
1
tsp.
coconut sugar
1/8
tsp.
baking powder
Pinch
of cinnamon & sea salt

coconut oil
Instructions
In a small bowl mix together wet ingredients, banana, apple sauce, vanilla, nut milk, and coconut sugar.
In a small bowl mix together dry ingredients, flour, baking powder, sea salt and cinnamon.
Mix wet and dry ingredients together and add batter into a small ceramic mug (greased with coconut oil).
Flatten the top of the batter with a spatula to remove air bubbles and microwave for 2-3 min until cooked.
Using a butter knife, score around the mug cake and flip out onto a cooling rack to cool for 5 min.
Notes
To check if your banana bread mug cake is fully cooked, stick a toothpick down the middle and if it comes out clean its done.
