Spinach and Feta Egg Wrap
A healthier spin on Starbucks' spinach and feta egg wrap, made right in the comfort of your own home. Filling, satisfying and ready in 5 minutes!
- 1 medium size whole wheat tortilla wrap
- 2 large eggs
- 1/4 cup red pepper diced
- 1 handful baby spinach
- 1 tablespoon goat feta cheese crumbled
- pinch of salt and pepper
Heat a medium frying pan on medium-high heat. Spray with olive oil.
In a medium bowl, whisk the eggs and add the peppers.
Pour the eggs and peppers in the skillet and season with salt and pepper. Cover and cook for 2 ½ minutes.
Remove the lid and top with spinach and feta. Fold in a half-moon shape, cover and cook for 1 minute.
Transfer the omelette on top of tortilla and wrap it up, burrito style.
Spray the pan with more oil, add the wrap, cook for 30 seconds, flip and cook for another 30 seconds. Serve while warm.
