Quick & Easy Breakfast Shakshuka

Quick & Easy Breakfast Shakshuka, made with poached eggs cooked in a flavourful tomato sauce. This is a substantial breakfast that will keep you going all day and ready in just 5 minutes!

  • 1/2 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1 green onion (save the green part for topping at the end)
  • 1 cup canned diced fire roasted tomatoes strained
  • 1 teaspoon tomato paste
  • 2 large eggs
  • pinch of salt and pepper
  • 2 slices fresh bread


  • avocado sliced
  • green onion
  • goat cheese crumbled


  • Heat the olive oil in a medium skillet over medium-high heat.
  • Add the garlic and white part of the green onion and saut√© for 1 minute.¬†
  • Add the diced tomatoes and tomato paste. Stir, and with the back of a spoon, make 2 indentations, making sure they are evenly spaced. Gently crack and egg directly into each well and spoon a bit of sauce over the egg whites, leaving the yolk exposed. Season with salt and pepper, cover and cook for 3 to 4 minutes until the egg whites are fully cooked but the yolk is still runny.
  • While the eggs are cooking, toast the bread.
  • Serve on toasted bread and top with sliced avocado and the green part of the onions.
