Quick & Easy Breakfast Shakshuka
Quick & Easy Breakfast Shakshuka, made with poached eggs cooked in a flavourful tomato sauce. This is a substantial breakfast that will keep you going all day and ready in just 5 minutes!
Servings: 1
- 1/2 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- 1 green onion (save the green part for topping at the end)
- 1 cup canned diced fire roasted tomatoes strained
- 1 teaspoon tomato paste
- 2 large eggs
- pinch of salt and pepper
- 2 slices fresh bread
Toppings
- avocado sliced
- green onion
- goat cheese crumbled
Heat the olive oil in a medium skillet over medium-high heat.
Add the garlic and white part of the green onion and sauté for 1 minute.
Add the diced tomatoes and tomato paste. Stir, and with the back of a spoon, make 2 indentations, making sure they are evenly spaced. Gently crack and egg directly into each well and spoon a bit of sauce over the egg whites, leaving the yolk exposed. Season with salt and pepper, cover and cook for 3 to 4 minutes until the egg whites are fully cooked but the yolk is still runny.
While the eggs are cooking, toast the bread.
Serve on toasted bread and top with sliced avocado and the green part of the onions.
