Berry Beet Orange Smoothie

This pretty in pink vibrant beet, berry and orange smoothie is packed full of veggie and immune-boosting Vitamin C and antioxidants for a burst of nutrients to start your day!

Ingredients

  • 1 cup steamed and frozen cauliflower* (see notes below)
  • 1 frozen banana
  • 1/2 small raw beets peeled and cut into quarters
  • 1/2 cup frozen raspberries
  • 1/2 orange peeled and chopped
  • 1 1/2 cup oat milk unsweetened
  • 1/2 cup water

Instructions

  • Place all the ingredients in a high-speed blender and blend on high for 1 to 2 minutes until smooth and creamy. I like to use the smoothie setting on my blender as it blends it perfectly. Divide into 2 large glasses, and garnish with an orange wedge. Enjoy!

Notes

*To prep the cauliflower, fill the bottom of a large pot with 2 inches of water, add a steamer basket  and bring the water to boil. Lower the heat to medium, add the cauliflower and cover. Steam for 7 to 9 minutes, until lightly steamed but still firm and crunchy (you don’t want them to be fully cooked and soft). Transfer the steamed cauliflower to a parchment lined baking sheet  and allow to cool completely. Place in the freezer and freeze for 1 to 2 hours. Remove the tray from the freezer and transfer the frozen cauliflower to a reusable freezer bag. Store in the freezer for up to 3 months.
