Creamy Cashew Chai Spiced Smoothie

This Cashew Chai SpicedSmoothie is so creamy with warming spices like cinnamon, cardamom, nutmeg and ginger. Ready in 5 minutes, this latte inspired smoothie for breakfast never looked so cozy!

Ingredients

Smoothie

  • 1/4 cup raw cashews
  • 1/2 tsp cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground clove
  • pinch of sea salt
  • 1 medjool date pitted
  • 1/4 tsp pure vanilla extract
  • 1/2 tsp raw ginger root
  • 1 1/2 cups water
  • 1 cup frozen cauliflower florets* (see notes below)
  • 1/2 cup frozen banana

Garnish (Optional)

  • toasted coconut flakes unsweetened
  • cinnamon

Instructions

  • Add the cashews, cinnamon, cardamom, nutmeg, clove. salt, date, vanilla and ginger root to a high-speed blender. Blend on high until smooth, for about 60 seconds.
  • Toss in the frozen cauliflower and frozen banana and blend for another 30 to 60 seconds until smooth and creamy.
  • Pour into 2 glasses and garnish with dried toasted coconut flakes and a dash of cinnamon.

Notes

*Notes To prep the cauliflower, fill the bottom of a large pot with 2 inches of water, add a steamer basket and bring the water to boil. Lower the heat to medium, add the cauliflower and cover. Steam for 7 to 9 minutes, until lightly steamed but still firm and crunchy (you don’t want them to be fully cooked and soft). Transfer the steamed cauliflower to a parchment-lined baking sheet and allow to cool completely. Place in the freezer and freeze for 1 to 2 hours. Remove the tray from the freezer and transfer the frozen cauliflower to a reusable freezer bag. Store in the freezer for up to 3 months.
