Lemon and Garlic Green Beans 

Crisp and tender steamed green beans sauteed in butter and garlic, and topped with freshly squeezed lemon juice, crunchy toasted almonds, fresh parmesan and lemon zest!

Ingredients

  • 1 lb french green beans trimmed
  • 1-2 tbsp organic unsalted butter you can also use olive oil or ghee
  • 2-3 cloves garlic minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 lemon juiced
  • zest of 1 lemon
  • 1/2 cup sliced almonds toasted
  • 1-2 tbsp finely grated fresh parmesan

Instructions

  • Bring a large pot of water to a boil. Add green beans, cover and cook for 5-8 minutes just until they are tender but still bright green and crisp.
  • Drain beans and set aside.
  • While the beans are boiling, lightly toast the sliced almonds in a skillet on medium-low heat for 8-10 minutes, watching carefully that they don’t burn.
  • Heat up a large skillet to medium heat and melt butter. Add garlic and saute for 1-2 minutes until slightly golden and fragrant.
  • Add green beans to the skillet, season with salt and pepper and saute in butter and garlic for 2 minutes.
  • Turn off heat and transfer green beans to a serving dish.
  • Squeeze lemon juice and garnish with zest, almonds and parm. Serve warm or chilled.
