Revamp your taco Tuesday night with these Simple Cauliflower Tacos. They’re delicious, healthy and SO easy to make!

Ingredients
4cupscauliflowercut into small florets
¼cupwater
½tablespoonextra virgin olive oil
2teaspoonschili powder
1teaspoononion powder
1teaspoongarlic powder
½teaspoonpaprika
¼teaspoonground cumin
¼teaspoonof sea salt
¼teaspoonblack pepper
6Corn Tortillas
2cupsslaw
Juice of 1 lime
1tablespoon mayonnaiseI like Veganaise
1teaspoonpure liquid honey
Garnish: chopped cilantro
Optional: greek yogurtsliced avocado
Instructions
Steam the cauliflower for 5 minutes.
In a medium bowl, add the slaw, lime juice, mayonnaise and honey. Stir until evenly coated. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the cauliflower, water and all the spices, stir, cover with lid and cook for 2 to 3 minutes.
While the cauliflower is cooking, heat the tortillas in a pan on medium heat for about 30 seconds on each side.
To assemble the tacos, add a couple of spoonfuls of slaw, a few pieces of cauliflower and top with a dollop of greek yogurt or sliced avocado and garnish with cilantro. Enjoy!
Notes
Variations: If you’re not pressed for time, you can roast the cauliflower in the oven at 450℉ for about 20 minutes, or until golden brown. Just toss it with all the spices and a splash of olive oil.
