In a large soup pot saute the onion and garlic in olive oil.
Add pumpkin, tomatoes, 2 celery, 2 carrots, and water with vegetable stock cubes and cook on medium heat.
Once vegetables are tender and blend everything together.
Next, add 1 carrot, 1 celery, beans, barley, spices and kale and simmer until all vegetables are tender and cooked to your liking.
Pour into some cute bowls/mugs and top with a sprinkle of Parmesan if you’d like.
