In a large bowl add in shredded kale, add lemon juice, olive oil and sea salt and with clean hands massage the kale for about 30-60 seconds.
Next, add in remaining ingredients except for avocado and pomegranate seeds.
Drizzle my Creamy Lemon Ginger Dressing all over and toss until well coated and top with sliced avocado and sprinkle with pomegranate seeds. You can mix these in before you had the dressing but I think they look nice on top.
