Why drink a smoothie when you can eat it in a pretty bowl? Iโ€™ll admit smoothie bowls are not something I make on a regular basis but when I do itโ€™s that much more special. Why is it that everything just tastes better in a bowl? I mean I love most foods that come in bowl form.. oatmeal, soups, stews, curries, you name it! There’s just something about a bowl that screams cozy cold-weather comfort food. Itโ€™s always better in a cozy bowl! I guess Iโ€™m so used to making my usual green smoothie I forget there are other options but this one is worth breaking habits for, let me tell you!

This pumpkin pie smoothie bowl will make you feel like youโ€™re having a pumpkin pie sans the guilt! Itโ€™s delicious and super creamy thanks to the coconut milk, and it also happens to be good for you. Itโ€™s packed full of fibre, healthy fats and protein plus itโ€™s a perfectly balanced breakfast that will keep you satisfied for hours.

Making a Thick Smoothie

How do you make a great smoothie bowl? Itโ€™s all about the consistency…it should be thick enough to eat with a spoon, but not so thick that your blender canโ€™t be bothered to blend it…haha! You also donโ€™t want it too runny as youโ€™ll end up with a good old smoothie. One of the ways to get that thick smoothie bowl consistency is to freeze your pumpkin purรฉe in ice cube trays. If you donโ€™t have time to freeze your pumpkin purรฉe, just toss in a cup of ice cubes. The best part about a smoothie bowl, and probably my favourite part is the toppings! This is where you can be creative and go wild. I always like to add something crunchy, like a good granola, or chopped nuts, drizzle something creamy like coconut milk or drippy almond butter, add a few slices of banana and a dash of pumpkin spice.

Pumpkin Pie Smoothie Bowl

This Fall inspired pumpkin pie smoothie bowl is thick, creamy and infused with warming spices and creamy coconut milk for the ultimate dessert or breakfast bowl!

Ingredients:

Smoothie Bowl

  • 1 cup pumpkin purรฉe frozen in ice cubes
  • 1 frozen banana chopped
  • 1 medjool date pitted
  • 1 tbsp natural almond butter
  • 1 tsp raw turmeric root
  • 3/4 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/2 tsp pure vanilla extract
  • 1 cup coconut milk (from can or carton depending on if you want it lighter or more as a dessert)
  • 1/2 cup water (add 1/2 cup more if you want thinner consistency not as a smoothie bowl)

Garnish (Optional)

  • granola
  • pumpkin seeds
  • drizzle of coconut milk
  • pumpkin spice

Instructions:

  • Place all the ingredients in a high-speed blender and blend on low for 60 to 90 seconds, or until smooth and creamy.
  • Divide into two bowls and top with your favourite granola, a drizzle of coconut milk and a dash of pumpkin spice.
