Mashed Salmon Avocado Tartine

Mashed salmon avocado tartine, layered with baby spinach, avocado piled high on top of toasted sourdough bread with fresh basil and garlic, ready in 5 minutes!

Now you guys know how much I love my avocados so you bet I’m always testing out new delicious ways to enjoy it. Well let’s just say this Mashed Salmon Avocado Tartine has been my go-to lunch for when Cloe (my mini-me, aka my lil sis) and I are having a long shoot day and need something quick to munch on and keep us going.  This recipe takes your usual avocado on toast to a whole new level..literally! I love adding ingredients like fresh basil and garlic to my canned tuna or salmon for that added burst of gourmet flavour. Packing it with baby spinach adds a nice buttery texture and is a great way to sneak in more greens – cuz you all know how much I love my greens!!

 

Using canned wild salmon is a great alternative to fresh salmon as you can keep it in your pantry to have ready to grab and throw into salads, wraps or in this case on toast.  It’s also a good source of protein, calcium, Vitamin D and Omega 3’s for your skin. This is my favourite combination, but I also love using canned tuna, arugula or microgreens instead of spinach and cilantro instead of basil. If you’re pressed for time just mash the avocados right into the salmon mixture and skip the mayo!

I promise this toast will make you fall in love with avocado toast all over again, not to mention it will keep you energized and going until dinner time.

Mashed Salmon Avocado Tartine

Mashed salmon salad layered with baby spinach, avocado piled high on top of toasted sourdough bread with fresh basil and garlic, ready in 5 minutes!
Total Time: 5 minutes

Ingredients:

Salmon Salad

  • 1 can 6 oz wild salmon (without bones), drained and flaked
  • 1 clove garlic minced
  • Juice of ¼ lemon or 1 tablespoon
  • Pinch of sea salt and pepper
  • 1 tablespoon mayonnaise I like this brand
  • 1 tablespoon finely chopped fresh basil

Base

  • 2 slices sourdough bread toasted
  • ½ large ripe avocado sliced
  • Pinch of sea salt and pepper
  • ½ cup baby spinach

Instructions:

  • In a small bowl, mash the wild salmon. Add the minced garlic, lemon juice, salt, pepper, mayonnaise and basil and stir until well combined.
  • Arrange the sliced avocados on top of the toast and mash with the back of a fork until smooth but still a bit chunky. Season well with salt and pepper, and top with spinach.
  • Divide the salmon mixture in half and evenly spread on top of the avocado toast. Enjoy!
