Healthy French Toast

This is one sweet treat that you may want to save for a Sunday brunch, with some friends and family. It’s important to realize you don’t have to stay away from everything indulgent as long as you modify it in a healthy way. Here I used unsweetened almond milk, omega 3 eggs (you can substitute with egg whites), agave nectar instead of maple syrup and whole wheat chia bread. With some simple modifications you can enjoy some of the foods you like once in a while.

Healthy French Toast

Ingredients:

  • 6 slices bread (whole wheat, chia, flax, etc)
  • 1-2 cups mixed berries fresh or frozen
  • 1 cup unsweetened almond milk
  • 4 large eggs (or 6 egg whites)
  • 1 tsp vanilla extract
  • 1 pinch Sea salt
  • 1 tsp cinnamon
  • 1 tbsp coconut oil

Instructions:

  • In a large bowl whisk together milk, eggs, vanilla, salt, and cinnamon
  • Next in a deep pan place 6 slices of bread into it and pour over mixture on top
  • Soak for about half an hour until thoroughly saturated
  • Heat up a non stick pan and add some coconut oil before placing soaked bread onto pan
  • Cook for about 2-4 min on each side and transfer onto a plate
  • Add berries and agave nectar and you have yourself a delicious Sunday brunch!
