Three Bean Veggie Chili

This is a great recipe for Sunday night to make lunches or dinners for the rest of the week. All it takes is a quick stop at the store for supplies and a large crock pot or deep pot and you’re ready to go! I love this dish because there’s very minimal chopping and dicing involved and it makes a large amount. So grab your can opener because you’ll need it for this one.Serve over some quinoa and you have yourself a complete protein dish that is packed full of fiber, vitamins, and protein to keep you full and energized!

Recipe

Three Bean Veggie Chili

Ingredients:

  • 3 cans Beans your choice
  • 1 large can crushed tomatoes
  • 2 red onions chopped
  • 3-4 cloves garlic minced
  • 1 can sliced mushrooms
  • 1 tbsp tomato paste
  • 1 cup water
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp crushed chili flakes
  • Sea salt and ground pepper

Instructions:

  • In a large crock pot or deep pot on the stove begin adding in ingredients
  • Start with EVOO, garlic, onion, and tomato paste
  • Next add in crushed tomatoes, water, mushrooms and beans
  • Begin to add in spices while stirring the pot to mix everything together 
  • Turn crock pot onto low temp for 4-6 hours

Notes

NOTE: If you’re using the stove top, bring to a boil then reduce heat to low and simmer for about an hour.
