We’re wrapping up #DETOXJANUARY with a bright and colourful skin glowing salad because salads are one of the best ways to get so many healthy foods into your body. If you’ve never been a salad lover I promise you that this beauty detox salad is AH-MAZ-ZING! Its got the right amount of crunch, creaminess and flavour that you’ll forget entirely that you’re eating a salad thats actually so so good for you.

As I’ve mentioned before, a salad is only as good as its dressing! Boy, do I have a delicious one that you’re going to love! My Creamy Lemon Ginger Salad Dressing is full of vitamin C, and anti-inflammatories from the lemon, ginger and turmeric. I’ve been adding fresh turmeric root into all my smoothies and golden milk lattes lately! Its just SO amazing for – inside and out!

This beauty detox salad is full of colourful veggies and fruit and has some great healthy fats from the pumpkin seeds and avocado. You can eat this salad by itself as a lunch or pair it with a grilled salmon fillet for some extra protein and omegas.

Beauty Detox Salad

A colourful beauty detox salad rich in antioxidants and healthy fats that will make your skin glow from within!
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients:

  • 1 head butter lettuce
  • 1 head Kale de-stemmed and shredded
  • 6 small radishes thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1 large red pepper thinly sliced
  • 1 cucumber thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1 green onion thinly sliced
  • 1 avocado thinly sliced
  • 1/2 large pomegranate
  • 1/4 cup raw pumpkin seeds

To Massage Kale

Instructions:

  • In a large bowl add in shredded kale, add lemon juice, olive oil and sea salt and with clean hands massage the kale for about 30-60 seconds.
  • Next, add in remaining ingredients except for avocado and pomegranate seeds.
  • Drizzle my Creamy Lemon Ginger Dressing all over and toss until well coated and top with sliced avocado and sprinkle with pomegranate seeds. You can mix these in before you had the dressing but I think they look nice on top.
