What I Eat in a Day | Fall Edition with Shannon Sullivan

Fall flavours are here and I’m loving every minute of it!Β  And so, I want to share with you a recent What I Eat in a Day video and give you some food inspiration this season. I have a special guest in today’s video, the beautiful and talented Shannon Sullivan who has her own healthy living YouTube channel and blog.Β  Shannon also follows a non-restrictive, balanced lifestyle approach which is why I know you’ll love all her recipes and healthy living advice the way I do. Todays What I Eat in a Day video is all about warming, Fall inspired foods and flavours like apples, cinnamon, squash and maple syrup.

Breakfast

When I wake up, the first thing I do is drink a large glass of filtered alkaline water (I’m still loving my Alkaline Santevia filter). I’ve also been taking a probiotic supplement with it since its flu season and I like to give my body a helping hand.Β  Afterwards, I always make myself a large mug of my favourite herbal coffee β€œBambu” which I’ve talked about more than a thousand and one times and yup you guessed it, I’m still loving it. I add 1 tbsp of Bambu and 1 tsp coconut sugar to boiled water, stir and top with my new favourite Eden Organic Unsweetened Soy Milk.Β

For breakfast, I’ve been making steel cut oats in my slow cooker for the past 3 weeks and it has saved me so much time in the mornings, you’d never believe it. I highly recommend trying this out if you’re looking to do some meal prepping and want to wake up to a warm bowl of hearty oats every day.

Lunch

For lunch, I had already pre-roasted some cubed butternut squash and threw it on a large massaged kale salad topped with cucumber, celery, green onion, cilantro, avocado and my Creamy Maple Tahini dressing! I love mixing hot and cold veggies together with kale because it doesn’t wilt the way lettuce does. This combination makes it the perfect salad to enjoy on a Fall day.

For my snack today, I kept it super simple with some chopped raw zucchini sticks and baby carrots with some store bought chipotle hummus. If you’ve never tried raw zucchini before, it’s especially delicious dipped in hummus and beetroot dip, which I used to do all the time in Australia. I really need to recreate an Aussie beet dip soon on my channel πŸ™‚

Dinner

For dinner today, I roasted some spaghetti squash, which is one of the best veggie replacements for pasta. Then I poured some super easy homemade roasted red pepper and tomato sauce over the spaghetti squash and paired it with a side of sautΓ©ed rapini. Rapini is one of the greens that you either love or hate. It’s basically a mix between a broccoli and spinach with a bitter taste, but it tastes amazing sautΓ©ed with olive oil, lots of garlic, salt and pepper.

Β To be honest, I don’t always have dessert but after Halloween I always seem to have more of a sweet tooth. Tonight I put together the easiest dessert you’ll ever make – peanut butter stuffed dates. The combination is amazing and I often enjoy this with a hot cup of herbal tea like my recent favourites; Chamomile citrus or Ginger Aid.

That’s everything I ate today or have been typically eating but it changes from day to day depending on my mood! I hope I gave you some yummy fall food inspiration to enjoy before the winter weather comes.
